Honey Miso Wild Rice Waldorf Salad

Miso is a fermented soybean paste commonly used in Japanese cooking. It has a salty and savory flavor. In this recipe it helps to balance the sweetness of the honey and compliments the toasted walnuts, whole grain wild rice, and fresh apples. You can find miso paste in the produce section of most grocery stores (look near the tofu and wonton wrappers) and it keeps well for months in the refrigerator.

Ingredients:
  • ½ cup mayonnaise
  • 3 tablespoons apple cider vinegar
  • 1½ tablespoons white miso paste
  • 1 tablespoon honey
  • ½ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • 2 cups cooked wild rice
  • 2 cups cooked and shredded chicken (like from a rotisserie chicken)
  • 2 ribs celery, chopped
  • 3 green onions, chopped
  • 1 large apple, diced (I like granny smith or honeycrisp)
  • ½ cup walnuts, toasted and roughly chopped
  • ⅓ cup dried cranberries

Directions:
  1. In a mixing bowl whisk together mayonnaise, vinegar, miso paste, honey, garlic powder and onion powder until smooth.
  2. Add wild rice, chicken, celery, green onion, apple, walnuts and cranberries; stir to combine. Adjust seasoning to taste.
Tip: If you are cooking dry wild rice for this recipe cook extra and keep it in the freezer to easily add to future recipes.
