Turkey Zucchini Sloppy Joes

I don’t think sneaky veggies are just for kids. I know I have days when eating a bunch of vegetables feels like work, both physically and mentally. Those hard vegetable days are when I love to turn to recipes like this where the veggies essentially disappear into the rest of the meal. This recipe can be served in your favorite sloppy joe delivery method be that on a toasted bun, stuffed in a baked potato, or spooned over sweet potato fries.

Ingredients:
  • 1 tablespoon neutral oil
  • 1½ pounds ground turkey
  • 2 teaspoons salt
  • 1 teaspoon ground black pepper
  • 1 medium onion, chopped
  • 1 each red bell pepper, chopped
  • 2 tablespoons tomato paste
  • 1 tablespoon ground mustard
  • 2 teaspoons garlic powder
  • 4 cups shredded zucchini
  • 1 can (15-ounces) tomato sauce
  • 2 tablespoons honey
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Worcestershire sauce

Directions:
  1. Heat oil in a large skillet over medium-high heat. Add turkey, salt and pepper; break apart and cook until meat is browned and no longer pink.
  2. Add onion and pepper; cook for 3-5 minutes until tender and fragrant. Stir tomato paste, mustard and garlic; cook for about 1 minute to bloom flavors.
  3. Add zucchini and cook another 4-8 minutes or until tender and most of the liquid has evaporated.
  4. Add tomato sauce, honey apple cider vinegar, and Worcestershire sauce; stir to combine. Bring to a gentle boil, reduce heat to low, and simmer for about 10 minutes. Adjust seasoning to taste.
  5. Serve as desired.
