Cinnamon Peanut Butter Banana Baked Oatmeal
I love a recipe re-mix. This peanut butter banana take on baked oatmeal is something I started playing around with after the success of the Cherry Chocolate Almond Baked Oatmeal recipe. This is a great way to use up over-ripe bananas and have an easy-to-heat-and-eat make ahead breakfast with an energy supporting balance of protein, fiber, and fat!

Ingredients:
- 3 very ripe bananas
- 2 cups cottage cheese
- 1 tablespoon maple syrup
- 2 large eggs
- 1 teaspoon vanilla
- Pinch of salt
- 2½ cups old fashioned oats
- 1 teaspoon baking powder
- ½ cup peanut butter
- 2 tablespoons maple syrup
- 1 teaspoon ground cinnamon
Directions:
- Heat oven to 350°F. Butter an 8x8-inch baking dish; set aside.
- In a blender combine bananas, cottage cheese, maple syrup, eggs, vanilla, and salt. Blend until mixture is smooth.
- Add oats and baking powder. Pulse a few times to mix while keeping the oats mostly whole.
- Transfer mixture to prepared pan.
- In a small bowl, stir together peanut butter, 2 tablespoons maple syrup, and ground cinnamon. Drop spoonfuls of the peanut butter mixture over the surface of the oats. Swirl gently with a butter knife.
- Bake for 35-40 minutes or until mixture is just set in the middle.
